Although Senegal's Independence Day (April 4th) has come and gone, it is never too late to celebrate the many flavors of this West African nation, especially if the meal is prepared by Aminata Dia. A native of Senegal, Aminata is a graduate in culinary arts from the Art Institute of Colorado, and the owner of her own catering company, Ami Cuisine.
