A Taste of Senegal

Although Senegal's Independence Day (April 4th) has come and gone, it is never too late to celebrate the many flavors of this West African nation, especially if the meal is prepared by Aminata Dia. A native of Senegal, Aminata is a graduate in culinary arts from the Art Institute of Colorado, and the owner of her own catering company, Ami Cuisine. The dinner is vegetarian friendly and includes drinks.

Bissap Punch
Pineapple-Hibiscus cocktail with rum and exotic spices

Pastel
Senegalese empanadas stuffed with tuna or vegetarian, and served with cooked tomato salsa


Salad

Papaya Salad
Papaya and mixed greens tossed with a citrus vinaigrette


Main Course

Vegetarian Maffe
Sweet potatoes, red and green peppers, in a peanut butter sauce

Grilled Chicken Yassa
Chicken marinated with Dijon mustard and lime juice, grilled, and slow-cooked in caramelized onions

Main courses are served with steamed-rice
